Four ingredients, nothing else

The classic recipe is “00” flour, water, salt, and yeast. No oil, no sugar, no shortcuts. Finely milled “00” flour gives the dough its soft, elastic texture, and a slow fermentation develops flavor that you can’t fake with additives.

Why simple is harder

Fewer ingredients means there’s nowhere to hide. The flour has to be right, the fermentation has to be patient, and the shaping has to be done by hand. When it’s done well, that simple dough bakes into a light, blistered crust with real character.
