30+ Years of Pizza: The Pulcinella Story in Fort Collins

Some restaurants come and go. Pulcinella has been making pizza in Fort Collins since 1991 — more than three decades in the same community, near Colorado State University at Drake and Shields.

A family-owned pizzeria

Pulcinella is family owned, run by Mary Race, and that shows in how the place feels. It isn’t a chain and it isn’t trying to be. The focus has always been authentic Neapolitan pizza made the right way, served to a town that keeps coming back.

Rooted near CSU

Being near campus means we’ve fed a lot of people over the years — students, families, professors, and locals who were students here themselves once. Generations of Fort Collins have grown up on our pizza. That kind of longevity isn’t luck; it comes from doing the same thing well for a long time.

Still doing it right

Three decades in, we’re still VPN-certified, still making Neapolitan-style pizza, still adding a wine bar, calzones, pasta, and salads to the mix. The menu has grown, but the standard hasn’t moved.
